Street food in Palermo is eaten standing up, in the markets and outside the friggitorie, and it is a proper meal rather than a snack. What to try: arancine (locals use the feminine form), pane e panelle (chickpea fritters in a bun) with crocchè, pane con la milza (spleen in a soft roll), sfincione, and in the evening stigghiola grilled over coals. The Antica Focacceria San Francesco has served milza and panelle since 1834; Nino u Ballerino makes them in front of you; the Friggitoria Chiluzzo, on Piazza della Kalsa, is a neighbourhood spot. Ke Palle does arancine in many flavours on Via Maqueda, and near the Politeama, I Cuochini makes bite-sized rosticceria.
